This Diwali , Eat Without Guilt

Diwali is celebrated with great enthusiasm throughout every corner of India. What we know about Diwali is that , festival of lights. Moreover there is no celebration of Diwali without crackers and yeah sweets! It’s common that we regret usually after Diwali, because of the larger amount of calories we consumed through sweets. But no worries!! Here we give you two sweet dishes to make at Diwali . Eat without any guilt.!

KAJU KATLI

Ingredients

  • Cashews – 2 cups
  • Honey – 1 cup
  • Water

How to Make

  • Dry roast cashews in a skillet or a frying pan for about 5 minutes, stirring continuously to prevent it from burning.
  • Once you see a slight change in the colour of cashews, turn off the heat and transfer them to a plate, and allow it to cool at room temperature.
  • Now, transfer the roasted cashews to a food processor and grind them to get a coarse powder.
  • Heat a non-stick pan and add some water and honey to it. Heat it till you see the bubbles.
  • Add roasted cashew powder to it and stir continuously using a spatula. Once, you get a thick mixture, turn off the flame.
  • Place parchment paper in a large tray or on the kitchen counter, dump the entire cashew mixture on it and flatten it with a rolling pin.
  • Next, place the tray in the refrigerator for an hour. Once the flattened mixture turns firm, place silver foil on it.
  • Cut it in diamond shapes and your healthy kaju katli will be ready to serve.

 

Fruit Ladoos

 

Ingredients

  • Chopped dates – 1 cup
  • Almonds – 1/4th cup
  • Cashews – 1/4th cup
  • Figs – 1/4th cup
  • Pistachios – 1/4th cup
  • Raisins – 1/4th cup
  • Desiccated coconut
  • Cardamom powder – 1/2 tsp
  • Ghee – 1 tbsp

 

How to Make

  • Grind dates in a blender for 4-5 pulses and keep it aside.
  • Now, finely chop cashews, almonds, figs, pistachios, and raisins.
  • Heat ghee in a wok on low flame, add chopped dry fruits and sauté for 4-5 mins.
  • Add coarsely blended dates to it and give it a nice stir, mashing the dates as well.
  • Add cardamom powder and mix it well.
  • Turn off the flame and let the mixture cool for 2 minutes.
  • Transfer the mixture to a large dish and make the ladoos.
  • Store in an airtight container.
